Vinification: manual harvesting of grapes selected in boxes from 15 kg, destemming and soft pressing of the grapes, maceration on the skins, fermentation at controlled temperature, stop in steel for 18 months, with a final aging in bottle of 18 months.
Organoleptic characteristics:free floral hints (mimosa, camomile, broom) and fruity (peach, apricot) to the nose, together with pleasant notes of acacia honey, beeswax and smoky aromas. In the glass it is golden yellow, with a visible consistency, structured and pervaded with freshness by the sip, with a high persistence.
Recommended matches: Andria burrata with scampi and bottarga tartare; pasta with monkfish sauce; soufflé.
