Vinification:manual harvesting of selected bunches in 15 kg crates, destemming, cryomaceration and soft pressing of the grapes, fermentation in stainless steel tanks at controlled temperature, permanence for about 3 months in steel, aging for about 3 months in the bottle.
Organoleptic characteristics: bright straw-yellow, intense floral nose, then apple, lychee, dried fruit and thyme. Rich salinity, good body, with fruity and persistent trail in the finish.
Recommended pairings: venus rice with courgettes and shrimps; fish & chips; chicken salad.
