The grapes are picked at full maturity from a high elevation vineyard, fermented in small toasted oak barrels, and kept on the lees for one year. This is a full and complex Chardonnay due to the long contact with yeast and toasted oak. There is a subtle note of toasted hazelnut, evolving into honeysuckle and mineral extracts.

Vinification: Whole cluster pneumatic press / fermented in 500L French tonneaux
Maturation: 12 months in the same 500L French tonneaux / 6+ months in bottle
Recommendation: Excellent with grilled fish dishes and white meats.
